Ingredients for 1 serving:
tortilla (I prefer to use ready-to-cook tortillas)
half of an avocado
1 small tomato
salt, red pepper, and basil
lime (optional)
1 egg
feta cheese
Instructions:
Start by cooking the tortilla on both sides.
While it is cooking, get started on the avocado spread; remove the peel and smoosh the avocado with
a fork until you achieve the desired consistency.
Dice the tomato and add into the avocado mix; add salt, a little bit of lime juice, and freshly cut basil leaves.
Once the tortilla is ready, set it aside to cool down; break and sprinkle a generous amount of feta cheese
onto the pan, leaving a little bit of space in the center.
Crack the egg into the center of the pan and sprinkle salt and red pepper before closing it with a lid, cooking the egg and
cheese to your liking.
While the egg is cooking, put the avocado mix on the tortilla; once the egg is ready, place it on top as well.
Fold the tortilla into a quesadilla and enjoy!
